Responsibilities include:

• Directing food preparation and service for all meal periods
• Recipe adherence and daily specials creation with an emphasis on Italian cuisine
• Training and supervising kitchen staff
• Compliance with food and facility safety/sanitary requirements
• Ensuring food quality and cost standards are consistently met
• Completing kitchen administrative and human resource duties
• Inventory, ordering, scheduling within cost control budget guidelines
• 5 years prior experience as Chef/Senior Sous Chef is required
• All Cost Controls relating to food production
• Extensive knowledge of Food Safety Programs/HACCP/ and Health Department compliance.

Prior experience as Head Chef, Sous Chef, Executive Chef, Chef de Cuisine, Kitchen Director, BOH Director is critical to success at this job.
